Backpackers Pantry: Santa Fe Style Rice & Beans with Chicken
- Santa Fe is our favorite weekend get-away when we go south from our home here in beautiful Boulder, Colorado. So we decided we had to include some traditional and authentically local New Mexican green chilies to make this Southwestern favorite. You’ll feel like you’re in Santa Fe with us while getting an almost-unbelievable 27 grams of protein per serving. How do you do high protein? We use our all-natural white meat chicken to get there. Those green chilies couldn’t be better when combined with our super sweet corn and cheddar cheese, all blended with long grain brown rice. No gluten hiding in here though, and like all of our gluten-free meals, it’s tested to 20 ppm so you won’t be left wondering if you’re getting only the good stuff.

SAUCE [BLACK BEANS, CHICKEN (COOKED, DICED AND FREEZE-DRIED), CHEDDAR CHEESE (PASTEURIZED MILK, CHEESE CULTURES, SALT, ENZYMES, ANNATTO), TOMATO, ONION, SUPER SWEET CORN, TOMATO, POTATO STARCH, NONFAT MILK, MALTODEXTRIN, GREEN CHILI PEPPER, SALT, SUGAR.
Remove and discard enclosed oxygen absorber before beginning food preparation. Add 2-1/4 cups (540 mL) of boiling water to all contents. Stir well. Seal and let sit for 15-20 minutes. Stir and serve. Rehydration time doubles every 5,000 feet of elevation gain. Our directions are set for 5,000 feet.
