Dal-icious Discovery:

After a day of tackling the mundane – laundry, chores, and the ever-present mopping – I craved something simple and tasty. The Butternut Dal Bhat from Peak Refuel seemed like the remedy... if I could read the cooking directions. Gray text on a black background in small font might have been an expedition in itself, especially when I was already tired. But I managed to decipher the steps. Go me!

After measuring out the correct amount of boiling water and performing the necessary stirring and sealing ritual, I let it simmer in its bag. Life, as we know it, often includes distractions, and I may have let it simmer longer than advised. But here's the best part of forgetting I had "something on the stove" – perfect rehydration. It's the little victories, right?

Now, culinary cultures might not be my forte, but I believe this dish has Indian roots. I tend to tiptoe around fiery flavors, but the taste was a harmonious balance that my palate appreciated. The texture, ah, that was a delight. Each ingredient played its part, resulting in a symphony of flavors and a wholesome experience. The portion size was perfect. Not too much, not too little.

Navigating this dish was a breeze, thanks to my trusty long fork. Note to self: the bag can transform into an impromptu bowl with a little trim.

This one is the best ever - even if you're not a vegetarian. Tons of creamy coconut-curry flavour, lots of chickpeas and squash. Add a bit more water and leave it sit a bit longer. I also added some chili pepper flakes for extra spiciness. A big eater will be satisfied by the portion size but I had enough for lunch the next day, too.
